Cooking oils are rice bran oil rich in vitamin E, rice is blended with fibre-packed barley, and the salt used is unrefined, reflecting a quietly health-conscious philosophy. The signature dish is the tofu cheese menchi katsu, a crispy panko-cradled cutlet that oozes melted cheese within a light, fluffy tofu mixture, and it draws regulars back again and again. Other favourites include tofu chanpuru with prawns and broccoli, soy-milk carbonara, and tofu croquettes in mushroom sauce, with soy-milk desserts to finish.
